Red cabbage and apple salad with mandarin dressing
Simple, seasonal food - what could possibly bebetter than that?
This red cabbage and applesalad is a no-fuss, delicious salad you can enjoyon its own or accompanied with meat orwholegrain.
It was love at first taste for me, but ifyou have the patience, refrigerating the salad forat least half an hour will make the flavours evenmore intense.
Red cabbage and apple salad with mandarindressing
1/4 red cabbage (about 4 cups), thinly sliced
2 small apples, thinly sliced
1 cup golden raisins
1/2 cup pecans, toasted
Mandarin dressing
1 mandarin, peeled
1 tablespoon apple cider vinegar
3 tablespoons extra-virgin olive oil
pinch of sea salt
freshly ground black pepper
1. Place the mandarin in a food processor andblitz until smooth.
Add the other dressingingredients and blitz for a further 30 seconds oruntil everything is well combined.
2. Combine the red cabbage and apple in a largemixing bowl.
Pour in the dressing and toss well.
Finally, add the raisins and the pecans and toss tocombine.
